Okay, thanks to my wonderful Aunt Shirley, we tired her recipe for Chicken & Dumplings tonight. Everyone loved it. The kids ate it right up. Decorated the table up a little for a fun halloween dinner.
Below is a step by step how to on Chicken & Dumplings (hope my Aunt Shirley doesn't mind if I share). I don't think she would. She's great.
The Beginning - the chicken (which I hate messing with raw chicken, but you gotta do what ya gotta do). Boil one whole chicken that you have cut up (or do what I do, buy it cut up already). After finished boiling, remove chicken (save broth), cut up chicken. Their is just absolutely no way to make a chicken cooking or being cut up look cute, sorry!
To broth, add 5 cut up green onions, a handful of chopped celery, 5 or 6 whole allspice, 2 teaspoons poultry seasoning, a little sage (to your taste),salt & pepper and of course the cut up chicken. While simmering work on dumplings.
Dumplings, 2 cups flour a sprinkle of poultry seasoning, 1 can of chicken broth. Mix it up to look like photo. Drop small scoops into pot. Remember to make small drops of dough, it expands when it cooks, otherwise you'll have giant dumplings. Continue to cook, the dumplings will float then sink when completely cooked and ready to eat.
Served with a salad (we need our veggies) and at the request of my daughter, cornbread ( I know, I know...but she lovessssssssssss it, and her Mimi made it).
