Weight Watcher - Santa Fe Red Beans & Rice Salad
Super Duper Easy and really really fast dinner or lunch. There is NO cooking involved at all. For every person you are serving you will need that many Weight Watcher Santa Fe Red Beans and Rice (found in frozen section), light sour cream, pico, salsa, jalapenos,avocados, weight watchers cheese, lettuce ( I like the herb mix and romaine together) and baked corn chips. So all you are basically doing is opening packages and mixing. The closest thing to cooking this meal is turning on the microwave.
To serve to all my card girls I put all the ingredients in Mexican bowls and served on a batea (large round Mexican serving tray). Everyone places a bed of lettuce on their plate (bowls are great to) and tops with WW Santa Fe Red Beans & Rice then everyone adds the toppings of their choice.
