Mock Your Socks Off Crawfish Etoufee

I didn't take a picture ( sorry, I shared on snapchat and forgot), I'd like to say homemade but someone is going to get all sassy and bend out shape because....I used can soup ( heaven forbid).  Big picture is some nights you need easy and something you family likes that doesn't come out of a wrapper or delivered in box for five dollars.  On those nights, this is one of the recipes I reach for.


Ingredients:
1 stalk of Celery, chopped ( my least favorite of ALL veggies)
1 medium Onion, chopped  - to be totally honest I buy the celery and onion already chopped up at the grocery store.
1 1/2 sticks of butter ( original recipe calls for two sticks, its your call)
1 package of Crawfish meat ( found in frozen seafood section) or one pound of fresh peeled crawfish
1 can of Cream of Mushroom soup

Directions:
Saute the onions and celery in ALL the butter until tender. Add crawfish and soup, season with garlic salt, black pepper and Tony's Chachere's Creole seasoning, heat and EAT.  I said it was easy!   Serve over rice.

Pairs great with a salad and garlic bread.
